Le Gâteau de Suzy présenté dans l'ouvrage de Pierre Hermé Mes Desserts au Chocolat se compose en proportions égales de chocolat (du noir et du très bon, c'est préférable dans ce genre de gâteau tout simple) et de beurre, de sucre en moindre quantité, d'oeufs entiers et d'un peu de farine, pas trop pour ne pas alourdir. La surface est craquelée, l'intérieur moelleux et consistant sans plomber, le goût intensément chocolaté (et ce n'est pas pour me déplaire). Le fondant au chocolat est à réinventer et à personaliser, anyway.
